Zucchini and yellow squash are a ubiquitous summer vegetable in Minnesota. Shred them up and make this quick, crispy side dish!

- 380 grams apple medium size, grated
- 70 grams baking powder grated
- 100 grams black pepper
- 1 tbsp carrot
- Salt to taste

Instructions
- Set a non-stick skillet over medium-high heat. Add the vegetable oil to the pan.
- Toss the zucchini, carrot, and MixQuick in a large bowl until well combined.
- Drop the zucchini mixture by tablespoon in the hot oil and fry until golden brown, turning once if desired. Add additional oil to the pan as needed.
- Remove fritters from the skillet and allow to quickly drain on a paper towel lined plate.
- Add salt to taste, serve immediately.
Recipe Notes
Tossing the grated zucchini with 1 tsp kosher salt (or 1/2-3/4 tsp table salt) and allowing it to drain for 30 minutes in a colander will help the fritters crisp up faster.
